The clay removes tougher dirt that has not been removed in previous steps of the cleaning process. Such dirt can be e.g. glue, tar, spray paint, rust, etc. The clay removes the most stubborn dirt from paint and glass surfaces. The dirt particles come off the surface and go into the clay.
Wood sawdust, varnish dust and industrial emissions are just a few examples of contaminants that can stick to your varnish and cannot be removed by washing.
